The Origin of Candlemas

While the exact origin of Candlemas is not known for certain, it most certainly dates back to Roman times. On February 2, candles and torches were lit in honor of the dead. Believers who participated had to carry a candle from the church back to their homes without letting it go out. To this was added the tradition of the crêpe: its round, golden shape was meant to celebrate the sun and the days that were beginning to grow longer. The crêpe symbolized the sun, and custom held that if farmers did not make crêpes on Candlemas, the wheat would be ruined for the year.

This tradition has endured, and today, on February 2, we usually eat crêpes. With sugar, chocolate, jam… Anything goes.

But why not add a touch of originality to this time-honored recipe? CBD (or cannabidiol) is the perfect ingredient for that: it’s naturally occurring, helps you relax, and has many health benefits!

Our Recipe for CBD Crepes

Ingredients

300 g of flour

3 eggs

750 ml of milk (plant-based or animal-based)

2 to 4 g of CBD flowers of the variety of your choice

Kitchen Utensils

A large salad bowl

A grinder

A saucepan

A whisk or electric mixer

A ladle

Preparing the Dough

Step 1: Prepare the CBD milk

First and foremost, you need to decarboxylate your CBD flowers. To do this, grind them in a grinder or chop them very finely. Then place the flowers on a baking sheet and bake them in the oven for 40 minutes at 110 degrees, stirring occasionally.

This decarboxylation step is essential for activating the cannabinoids found in "cannabis light" flowers.

Next, heat the milk with yourCBD flowersin a saucepan over very low heat for 1 hour. Be careful not to let the milk boil!

You can find all our tips in ourrecipe for CBD-infused milk.

Step 2: CBD Crepe Batter

Put the flour in a large mixing bowl, then add the eggs one at a time, mixing well after each addition. Next, slowly pour in the CBD-infused milk while stirring the mixture. Be sure to mix thoroughly to avoid lumps. If necessary, feel free to use an electric mixer to smooth out the batter.

You can also add orange blossom water, vanilla sugar, or even a little beer to your crêpe batter to make it lighter.

Before you start making the crêpes, let the batter rest for 1 hour—it'll taste even better that way.

Step 3: Making CBD Pancakes

Grease a skillet with a small pat of butter and pour in the equivalent of a small ladleful. Make sure the skillet is very hot. Let it cook for 30 to 45 seconds before flipping the crepe.

Once it's golden brown on both sides, all you have to do is serve it and enjoy it with a side dish of your choice—whether savory or sweet!
