Christmas Recipe: CBD and Praline Yule Log

The CBD Yule Log: An Original and Relaxing Idea

Ingredients for the sponge cake:

4 eggs

 

100 g of granulated sugar

 

80 g of flour

 

45 g of cornstarch

 

1 vanilla bean

 

1 pinch of salt

 

 

Ingredients for the CBD praline cream:

180 g of praline chocolate

 

200 ml of heavy cream

 

100 g of praline

 

5 grams ofCBD flower trim


 

 

For the filling: 

150 g of praline

Recipe for a CBD and Praline Yule Log – Serves 8

 

Step 1:Start by decarboxylating the trim. To do this, preheat your oven to 110°C—100°C if using a convection oven—then spread the trim on a baking sheet lined with parchment paper. Bake for 40 minutes. 

 

 

Step 2:Once the trim has been decarboxylated, place it in a saucepan with the cream. Simmer over very low heat for at least 1 hour. Stir occasionally. Be careful not to let the cream boil. 

 

 

Step 3:When the cream is ready, strain it through a sieve to remove the solids. Then, refrigerate it for at least 1 hour.

 

 

Step 4:Preheat the oven to 180 degrees. Meanwhile, separate the egg whites from the yolks, then beat the whites until stiff peaks form, adding a pinch of salt. 

 

 

Step 5:Pour the egg yolks into a mixing bowl along with the sugar and the vanilla seeds scraped from the split vanilla bean. Using an electric mixer, beat the mixture until it turns pale. Then add the flour. This will give you a fairly thick batter. Don’t panic—the sponge cake isn’t done yet!

 

 

Step 6:Gently fold the egg whites into the mixture. The batter will then take on a more liquid consistency. You can then pour the sponge cake batter onto a baking sheet that has been greased with butter or lined with parchment paper. 

 

 

Step 7: Bake for 8 to 10 minutes. 

 

 

Step 8: Onceyour sponge cake is baked, place it on a damp kitchen towel. Then roll it up like a snail before letting it cool for a few minutes. 

 

 

Step 9:Now let's move on to the praline cream. Pour the praline into a bowl, then blend it until it forms a paste. 

 

 

Step 10:Melt the praline chocolate in a double boiler. Once the chocolate has melted, mix it into the praline paste, then let it cool. 

 

 

Step 11: Whipthe heavy cream into whipped cream and add it to the chocolate-praline mixture. 

 

 

Step 12:Unroll the cooled sponge cake and spread a generous layer of cream over it. Roll the sponge cake back up and refrigerate for ½ hour. 

 

Refrigerate the remaining praline cream.

 

 

Step 13:Finally, take your Yule log out of the fridge and top it with the remaining cream. Decorate it—it's ready to enjoy!
